Escarole type with broad, slightly twisted outer leaves that form around 10-12 in, tight-packed heads. The heads have a very deep heart that is well blanched, creamy-white, and buttery. Broad leaf endive varieties tend to be less bitter than the curly leaf endive varieties. Perfect eaten fresh as part of a salad, or sautéed or chopped and added into soups and stews. Makes an excellent garnish as well. Select sunny location and sow seed as soon as soil can be worked. Plant again in late summer for fall harvest. In mild winter areas plant in fall for winter and spring harvest. Cultivate soil and enrich with vegetable food. Firm soil over seed. Blanch hearts to make mild and tender, by tying outer leaves together over center when nearly mature. Pick entire plant or just the outer leaves to extend useful life.
