These freshly harvested buds are sweet and delicate tasting with a tender texture. The “Globe” is the flower bud which includes many edible parts: fleshy bases of the outer bracts, the receptacle, the inner bracts, and portions of the floral stem. Artichokes are very ornamental in the garden. Their gray-green leaves contrast well with other plants. In zones 6 and colder start seeds indoors in February and transplant to the garden about the time of last frost. In zone 7 and warmer direct seed in the garden. Plant in a sunny, well-drained location with rich soil. Keep soil moist, weed free, and apply vegetable food every 4 weeks. Harvest artichokes when buds are firm, and scales are closed. Leave a short stem attached to the harvested buds. Artichokes may produce secondary buds; continue harvesting as they mature.
