These greens are great producers and have dark green leaves with stark white midribs. The Georgia Collards have a cabbage-like taste and can grow 2-3 feet tall. Use them in stews, steamed or braised. Select a sunny location and plant in the spring when the soil is workable. For best results, loosen soil with spade or fork, fertilize with vegetable food and smooth with rake. Firm soil over seed and keep moist. In mild winter regions plant in late summer for fall and winter harvest. Keep soil moist, weed free and feed every 4-6 weeks. Cook entire above ground part of the plant when young or just tender outer leaves. Flavor is sweetened by cool weather and frost.
