The Latini Vacuum Batch Cooker is an easy to operate cooking system for soft caramels (toffees, chewy candy), jam and gum based confectionery items. It is equipped with teflon scrapers that ensure the mix is uniform and no mass sticks to the heated walls of the cooker.

With the control panel the steam is automatically cut-off at the set temperature. Equipped with an automatic dosing system that ensures ingredients are added at the right time and temperature that helps in maintaining a consistent quality product.
