Vacuum batch cooker for various kinds of high-quality confectionery products. Completely constructed of stainless steel, the VC-45 is equipped with a high-performance delivering system. Our vacuum batch cookers dependably yield a high quality, low moisture candy mass for the production of hard sugar candies. The specially engineered cookers ensure a light-colored candy, formed with precise control , and are also ideally suited for the production of sugar-free candies.

Suitable for cooking high quality caramel, hard candies, jellies and fudge. Easy to operate, requires minimum space due to two stage construction with optional water ring vacuum pump and all contact parts of food-grade stainless steel. While vacuuming the batch another batch can be started parallely.

The cooking temperature is set at the operating panel. After the desired temperature is reached, and the mass to be discharged onto either the Latini Cooling Wheel or the Latini Cooling Plates for reducing the temperature of the mass for better handling and processing.
