The cooling plates consist of a plain and polished stainless steel surface with circulation channels fabricated underneath. The purpose of the cooling plates is to appropriately cool the candy mass after it has been poured from the cooking systems.

Our cooling plates have been in use for decades and have proven themselves in the largest and smallest processing units. These stainless steel, water-jacketed cooling plates are designed for rapid and uniform batch temperature control, allowing you to easily manage otherwise hot candy mass. Latini-Hohberger's space and labor-saving cooling wheels represent the innovative advance that we have adapted since 1926. Our Cooling Wheels bring down the temperature of the toffee/caramel mass to 40 degrees C - 50 Degree C instantaneously.

Equipped with a thickness regulator device, Water flow regulator, and drum rotation speed regulator, Hohberger Cooling Wheels ensure the job is done without there being the ancient need to handle the mass in trolleys or by hand. Furnished with Latini GMP Standard stainless steel drum, with automatic lubrication system and water temperature controller. Larger models can be optimized to a fully automatic processing system.

Redesigned for greater efficiency the inner shell diameter utilizes a water-spraying technique that thoroughly and continuously saturates its surface with cold water achieving an even temperature gradient over the drum surface. This process produces maximum heat transfer from the product.

Rigid construction - Heavy gauge stainless steel which is perforated throughout to permit heat from the product toi escape as well as eliminate small pieces or flashing of candy product to sift through.

Large Capacity blower is provided to supply air throughout the entire length of the drum. Refrigerated dry air is recommended for the blower intake, but ambient air is permissible when the cooling drum is located in a cool room with low humidity.

Elevation of the Cooling Drum for product flow can be regulated by raising or lowering the intake height for controlling length of time to remain and tumble inside of the drum

Latini Cooling Drum is built in four separate sections for easy removal should hot water or steam be required for cleaning.

Variable speed is provided to control tumbling speed and is easily regulated by a variable speed A.C. drive Ball bearing trunnions and rubber mounted wheels support the tumbling drum which ensures smooth and quiet operation as well as trouble-free performance.

Latini five stage oscillating cooling tunnel is most suitable for cooling of spherical and cylindrical lollipops. The oscillating trays continuously move the product while transporting and cooling the lollipops to avoid flattening of shape.

Furnished with an air circulation system which ensures the continuous flow of cool air throughout the oscillating trays. Latini's VLT-5 has been perfect with polyurethane enclosure panels which assure the thermal insulation of the tunnel.

The large capacity cooling system and efficient insulated enclosure of the 3MTR Refrigerated Cooling Tunnel makes it effective in hot and humid conditions where the ambient temperature is above 25 C/77 F. Humidity can be controlled to 45 RH. Variable speed drive allows retention times from 6 to 25 minutes.
