The candy sorting machine is designed to sort hard and filled sweets, sugar coated products, chewing gum, and confectionery in rectangular, round, and oval shapes. The sorting evaluates the thickness of the candy and rejects those that are over-formed, under-formed, or de-shaped. To accommodate a variety of goods, the thickness can be manually adjusted.

Candies that are larger than the predetermined size are discharged into the lower container. The sorted and size-appropriate candies are then moved ahead, where they can be collected in containers or automatically delivered to the wrapping equipment through a special transfer conveyor. The Latini continuous caramel station is designed for continuous production from batch cookers. The production can be sequenced in such a way that the process becomes continuous and there is no need to wait for one batch to prepare.

After the caramel is cooked, it is then transferred to a holding tank which is hot water-jacketed for further caramelization and is stirred continuously for a creamier and required color texture.

The full process is controlled through a 15" HMI screen and a P&ID starting the process from raw material added to the cooling of the caramel on a Hohberger Cooling wheel. The HMI screen shows all the parameters starting from temperature, steam, and time to monitor the process. The system is also equipped with a CIP system which with the press of a button can start the automatic process of cleaning the cookers, holding tank, pump, and cooling wheel.

The system is also equipped with a high-capacity pump to transfer the caramel from the holding tank to the cooling wheel.

The automatic continuous cooker produces hard-boiled candy/lollipop mass of finest quality with extreme smoothness and exceptional clarity while maintaining mass moisture levels under 1.5% (Varies on special integrity masses).Equipped with a high efficiency, energy saving, Tube in Shell Heat Exchanger and a powerful vacuum pump allows fast and consistent cooking with very low residual moisture.

The innovative new design of Latini's special cooking tubes are much more efficient and easy to clean in order to adhere to the GMP standards. Latini's CVC-800 consists of a Tube in Shell heat exchanger for cooking of the mass. The cooker consists of straight tubes which are easy to clean as compared to traditional circular coil systems and also utilizes less steam because of more contact area in the cooker.

In the Latini CVC-800 cooker the pre-blend syrup is pumped through single pass, high efficiency, stainless steel Shell and Tube heat exchanger, which cooks the syrup to the required temperature and then transfers it to the flash chamber for vapor removal. After the vapor removal the syrup is automatically transferred to the two receiving kettles for vacuumizing the mass for moisture reduction. After the vacuum process, the cooked mass is unloaded from the stainless steel kettles for further processing.

Latini's CVC-800 offers high output, with high transparency of syrup while fulfilling fast cooking speed. With its vertical design, and innovative operation, CVC-800 achieves excellent and highly efficient heat transfer characteristics.

For decades confectioners have used dependable Hohberger plants to produce outstanding fondant and crèmes. Hohberger fondant machines produce base fondant for extruded or continuously deposited crèmes. The introduction to the fondant of bob syrup, inverters, flavor, color, and inclusions is carefully controlled to assure that a homogenous mass at the exact temperature and brix is continuously provided to the mogul depositors. "Tails" and inconsistent crème are virtually eliminated. Choose our precision machines for crème, thin mints, cherry cordial centers, fudge base, mellow crème, cereal frostings or any of the many other places fondant is used in your products.

Designed to produce outstanding fondant crème, icing, or frosting. Rugged construction ensures years of low maintenance operation. All major components are fabricated from 304 or 316 stainless steel with dairy standard, sanitary welds. Only the most reliable motors, bearings and drives are engineered into these systems. The critical final syrup pumping, cooking and evaporation are accomplished using a single pass, high efficiency, stainless steel heat exchanger.

This proven design evaporator exposes syrup to elevated temperatures for less than 60 seconds, achieving a consistent end syrup temperature at the exact solids required.

This low residence time reduces inversion and sugar crystal browning. A water-clear, supersaturated solution exits the cooker and is gravity fed into the flash chamber and onto the drum for still cooling before entering the horizontal water-jacketed beater. The still drum cooling does not agitate the super-saturated syrup and inhibits crystal development before the syrup enters the beater.

The cooled syrup undergoes continuous controlled agitation within a horizontal paddle blade mixer. Each blade's large, pitched surface area provides a uniform folding action. The solution is grained out creating a snowy-white mass with a uniform crystal size of 9-12 microns.

Latini's Horizontal Pulling Machines are designed to pull-aerate-mix hard or soft candy masses inside a safely enclosed pulling area. The pulling is carried out by two vertical spinning arms that are lowered into the mass batch placed on the water-cooled pulling chamber-plate.

Focusing immensely on the operator's safety- the machine has been furnished with world-class safety features such as interlock switches and sensors.

To maintain the product's integrity, the machine has been equipped with a variable speed motor to allow the set up and timing of the moving arms.

Rigid construction - Heavy gauge stainless steel which is perforated throughout to permit heat from the product toi escape as well as eliminate small pieces or flashing of candy product to sift through.

Large Capacity blower is provided to supply air throughout the entire length of the drum. Refrigerated dry air is recommended for the blower intake, but ambient air is permissible when the cooling drum is located in a cool room with low humidity.

Elevation of the Cooling Drum for product flow can be regulated by raising or lowering the intake height for controlling length of time to remain and tumble inside of the drum

Latini Cooling Drum is built in four separate sections for easy removal should hot water or steam be required for cleaning.

Variable speed is provided to control tumbling speed and is easily regulated by a variable speed A.C. drive Ball bearing trunnions and rubber mounted wheels support the tumbling drum which ensures smooth and quiet operation as well as trouble-free performance.
